Like every other food and drink, bananas must be consumed in moderate quantities. Exercise regularly and relish them guilt-free! And if baked the right way, bananas can be your best friends in a figure-friendly diet. Here are three healthy baked banana recipes that will work perfectly for mid-evening snacks.

Banana oats muffin
Ingredients: 2 3/4cup mashed bananas, 2 tbs oil, 1 egg, 1/2cup fat-free milk, 3/4 tsp vanilla extract, 2/3cup whole-wheat flour, 1/2cup quick-cooking oats, 1/4cup sugar, 1 tsp baking powder, 1/2 tsp ground cinnamon, 1/4 tsp salt, cooking spray.

Method: Preheat oven to 375o. Mix all ingredients together - starting with the wet ingredients and then adding the dry ingredients. Pour into a baking tray. Bake for 18-20mins or until a wooden pick placed in the center comes out clean.

Banana blueberry bread
Ingredients: 1cup all-purpose flour, 1/2cup whole wheat flour, 3/4cup uncooked quick-cooking grits, 1/2cup sugar, 1/2 tsp salt, 1/2 tsp baking powder, 1/4 tsp baking soda, 3 tbs oil, 1cup mashed banana, 3/4cup blueberries (a low-preservative blueberry jam will also do - reduce sugar if using jam), 2 large eggs.

Method: Preheat oven to 350°. Mix flours, grits, sugar, salt, baking powder, and baking soda. Then, make a well within the mixture and add oil, banana, blueberries, and eggs; add to flour mixture. Spoon the batter into a baking tray and place it in oven.

Morning glory muffins
Ingredients: 1cup whole wheat flour, 1/2cup all-purpose flour, 1cup regular oats, 3/4cup packed brown sugar, 1 tbs wheat bran, 2 tsp baking soda, 1/4 tsp salt, 1cup plain fat-free yogurt, 1cup mashed banana, 1 large egg, 1cup chopped dates, 3/4cup chopped walnuts, 1/2cup chopped dried pineapple, 3 tbs ground flaxseed.

Method: Preheat oven to 350°. Combine all ingredients (starting with wet, and then adding dry). Now throw in walnuts, dates and pineapple. Pour into baking tray and bake at 350 degree for 20mins.

Banana corn muffins
Ingredients: 1/2 cup mashed ripe banana, 1/2 cup of 2% reduced-fat milk, 1 pack of corn muffin mix and cooking spray.

Method: Preheat oven to 350°. Combine milk, corn mix and banana and mix it in a bowl. Pour the batter evenly into a muffin baking tray. Bake at 350 degree for 20 minutes and your yummy banana corn muffins are ready to be served hot!
